 Let the (Reindeer) Games Begin
As we prepare our menus for the mongrels, our kitchens for the catastrophies and our mental stability for the booze, don't forget to place your orders for the center of attention.  The Goose will get you set up with everything you need to make this the best dang feast of the year.
 
 Here is a little taste of what we have on stage this season.  Remember, all items are limited in availability because real farms only have so many real animals.  So get your orders in early by calling the Goose (924-4944) or via email.
Bark
Shagbark Hickory Smoked Hams ($6.95/lb)  Gunthorp Farms all natural pork legs brined in citrus and spices for 6 days and smoked over Shagbark Hickory for 12 hours.  Our hams can be cut to just about any size. 
 
Pork Crown Roast ($8.95/lb)
What else but Gunthorp Farms Bone-In Pork Loin cut from the lean end.  These are eight bone crown roasts that average around 8 pounds and can serve up to 14 adults. 
   
Gunthorp Farms Turkey's ($2.99/lb) 
These birds earned their reputation in November.  They are available again for the those of you who didn't get enough.  They are on average 15-20 lb turkeys raised just the way they ought to be.  They are available by pre order only.  Gunthorp will be delivering in the afternoon on Tuesday 12/22(pick up times are between 5 pm and 8 pm Tuesday 12/22 only).  Watch the brining video.
 
Beef
 
Standing Rib Roast ($16.95/lb)
Fischer Farms all natural dry aged bone-in ribeye.  What more do you need to say?  It's good.  It's real good.  You can figure about two servings per bone.  Each bone is about 1 1/4 lbs of meat (ex. 4 bones= 5 lbs).  Add an extra bone or two if you want left overs.   
 
Whole Beef Tenderloin ($21.00/lb)
Lean and Mean.  They average 4-5 lbs each, feed between 8 and 10 adults and melt in your mouth.   
 
Lamb Crown Roast ($22.50/lb)
What you have here are two beautiful racks of Viking Lamb frenched and tied to make one beautiful roast.  They finish out about 3-4 pounds each and can feed approximately 6-8 adults.  Viking Lamb is so impressive we have a Colorado native packing loin chops in their carry on for their holiday activities.  Feast on that Mile High.

 All natural from North Dakota.  Coming 2009: Indiana raised all-natural Goose.

Lamb Rillettes
Lamb bellies dusted with cardamom, coriander and cumin then braised overnight.  Whipped, potted and sealed with pomegranate.  Great for an easy donation to a holiday gathering.  Serve at room temperature with toast.  Available Wednesday 12/17.
  
Foie Gras Torchon
Cured Hudson Valley Grade "A" Foie with clementine, star anise and clove, rolled, tied and poached in duck fat.  Available Friday 12/19.   
 
Tongue and Cheek Terrine
Braised pork cheeks and red wine poached lamb tongue nestled in winter spice lovin'.  Available Wednesday 12/17. 
 
The "Tour"
A selection of cured meats and farmstead cheese with all the accoutriments.  Great for cocktail parties.  Check out our holiday video  for more information and more entertaining ideas.
