The wild king salmon (Chinook) and sturgeon season in Oregon will soon be coming to a close.  The quality is still top notch.  These beauts are pulled by Native Americans from the chilly Columbia River.  
 
This may be one of the last weeks that the Chinook will be available.  Get your orders in by 5:00 pm Thursday!

Labor Day is upon us.  Fire up the barbie for one last fiesta.  We'll get you stocked up so well that you may have to call in Tuesday with a food coma.
 
Here is what you will find this weekend at the Goose....while supplies last.
 
Indiana Marinated Skirt Steaks (FKA Texas Marinated Skirt Steaks)- available immediately
Who cares if it is bigger in Texas?  It is better in Indiana.  Indiana beef skirt steak marinated in chiles, Worcestershire, garlic, onion, herbs, brown sugar and cider vinegar.  Great over hot coals with a cold beer. Careful!  They can get a little crispy. 
 
Barbecued Lamb (Heat and Eat)-available immediately
For this little treat we took a lovely Viking lamb worked in our dry rub and smoked it over alder wood for 8 hours.  Then we shredded it an simmered it in our tangy sauce for an additional 4 hours.  For those of you following along at home we just saved you 12 hours. All you have to do is heat and eat.  This is great for sammies.  If you don't believe it then try our Bayh sandwich that we are running this weekend and see for yourself.   
 
Double Smoked Black Pepper Jowl Bacon- Available Friday Afternoon
A hill country favorite.  Pastured pork jowls from Gunthorp Farms cured with salt, brown sugar and Shagbark Hickory Syrup doused with black pepper and double smoked.  Guaranteed to make the best JLT you have ever had. 
 
Marinated Country Style Pork Chops- Available Friday Afternoon
Juicy bone in pork chops ripe for the grill.  Sweet and savory rub (don't ask, don't tell) that will get ya with or with out sauce.
 
Pork Liver Parfait- Available Immediately
For a sophisticated outdoor cooking experience try this accompaniment.  Rich pork liver whipped with brandy, cabernet and star anise then sealed with a black raspberry gelee and candied ginger. 
 
  
     
Producer Days
Thanks to Erin Edds from Country Mouse City Mouse for hanging out with us last Saturday.  Our next visit will be from Mark Miles owner of Momma's Applesauce  today at 4:00 pm.  He will be offering up tastings of their applesauce and giving some tips for dishes that will be a sure fire kick for your grilling weekend.

The Goose loves a party, and there's no sweeter celebration than the one in your own backyard. So we're proud to spread the word about a celebration of local bounty ripe from Hoosier soil and Hoosier hands.
 
From Aug. 31 to Sept. 6, GOING LOCAL Week is a one week challenge to eat at least one locally grown or produced food at each meal during the seven day event.
